Prep & Preheat: Preheat your oven to 350°F (175°C). Grease a 6-cup muffin tin or line it with silicone muffin liners.

Sauté the Apple Filling: In a medium skillet, melt 1 tablespoon of butter (or coconut oil) over medium heat. Add 2 cups of finely diced apples (such as Honeycrisp or Granny Smith), 1 tablespoon of maple syrup, 1 teaspoon of ground cinnamon, and a splash of water. Sauté for 5–7 minutes until the apples soften slightly.

Mix the Oat Crumble: In a small bowl, combine 1 cup of rolled oats, 1/4 cup of almond flour (or oat flour), 2 tablespoons of melted butter (or coconut oil), 2 tablespoons of maple syrup, and 1/2 teaspoon of vanilla extract until a clumpy, crumbly dough forms.

Assemble the Cups: Press about half of the oat mixture firmly into the bottom and slightly up the sides of each muffin cup to create a base. Divide the sautéed cinnamon apples evenly among the cups, then top with the remaining oat crumble.

Bake & Serve: Bake for 15–18 minutes until the tops are golden brown and bubbling. Allow them to cool in the pan for 10 minutes before removing. Serve warm, optionally topped with a spoonful of Greek yogurt or a drizzle of maple syrup.
