Raw Espresso Cacao Energy Bites with Walnuts & Medjool Dates
Rich, fudgy no-bake bites made with sweet Medjool dates, buttery raw walnuts, dark cacao, and an energizing espresso kick.

What you'll need
Ingredients
1 cup soft Medjool dates, pitted (about 10–12 large dates; soak in warm water for 5 minutes if dry, then drain well)
1 cup raw walnut halves
1/3 cup raw cacao powder (or unsweetened cocoa powder)
1 1/2 tsp finely ground espresso beans (or instant espresso powder)
2 tbsp ground flaxseed or chia seeds
1 tsp pure vanilla extract
1/4 tsp fine sea salt
1 tbsp warm water (only if needed to bind)
Optional coatings: Extra cacao powder, unsweetened shredded coconut, or crushed raw walnuts
Let's make it
Instructions
Pulse nuts and dry ingredients: Add raw walnuts, raw cacao powder, ground espresso, ground flaxseed, and sea salt into a food processor. Pulse several times until the walnuts are coarsely ground into crumb-like pieces (do not over-process into butter).
Add dates and vanilla: Add the pitted Medjool dates and vanilla extract to the processor.
Blend until dough forms: Process on high for 1 to 2 minutes until the mixture breaks down and begins clumping together into a sticky, cohesive dough ball. If it feels too crumbly, pulse in 1 tablespoon of warm water.
Roll into bites: Scoop out 1 tablespoon portions of dough and roll firmly between your palms into bite-sized balls (yields about 14 bites).
Coat and chill: Roll the finished bites in unsweetened shredded coconut, extra cacao powder, or crushed walnuts if desired. Place on a parchment-lined plate and chill in the refrigerator for 20 minutes to firm up.
Storage: Keep stored in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 2 months.
