Mediterranean Quinoa Power Bowl
A vibrant Mediterranean-inspired quinoa bowl packed with chickpeas, crisp vegetables, feta cheese, and a fresh lemon herb dressing. Perfect for healthy lunches, meal prep, or a light dinner.

1 cup uncooked quinoa, rinsed
2 cups vegetable broth
1 (15 oz) can chickpeas, drained and rinsed
1 English cucumber, diced
1 cup cherry tomatoes, halved
1 red bell pepper, diced
¼ cup red onion, finely diced
¼ cup Kalamata olives, sliced
½ cup crumbled feta cheese
¼ cup chopped fresh parsley
2 tablespoons chopped fresh mint (optional)

Juice of 1 lemon
1 teaspoon Dijon mustard
1 garlic clove, minced
1 teaspoon dried oregano

Instructions
Cook the Quinoa: Rinse 1 cup of dry quinoa under cold water. Combine it in a medium saucepan with 2 cups of water (or vegetable broth) and a pinch of salt. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes until the water is absorbed. Fluff with a fork and let cool slightly.
Whisk the Lemon-Herb Dressing: In a small bowl or jar, combine 3 tablespoons extra-virgin olive oil, 2 tablespoons fresh lemon juice, 1 minced garlic clove, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk or shake vigorously until fully emulsified.
Prep the Fresh Ingredients: Halve 1 cup of cherry tomatoes, dice 1 cup of English cucumber, slice 1/2 cup of Kalamata olives, and thinly slice 1/4 cup of red onion.
Assemble the Power Bowls: Divide the warm, cooked quinoa evenly among serving bowls. Arrange the prepared tomatoes, cucumbers, olives, and red onions on top of the quinoa, along with 1 cup of rinsed canned chickpeas for protein.
Finish & Serve: Drizzle the lemon-herb dressing generously over each bowl. Top with 1/2 cup of crumbled feta cheese and fresh chopped parsley before serving.
