Lemon Garlic Baked Salmon & Asparagus
Tender, flaky wild salmon roasted alongside crisp spring asparagus with garlic, fresh lemon, and extra virgin olive oil.

Ingredients
Salmon & Veggies:
• 4 (6 oz) wild salmon fillets (skin-on or skinless)
• 1 bunch fresh asparagus, tough ends trimmed
• 1 tbsp extra virgin olive oil
• ½ tsp fine sea salt
• ¼ tsp freshly cracked black pepper
Lemon Garlic Glaze:
• 2 tbsp extra virgin olive oil or melted ghee
• 2 tbsp fresh lemon juice (about 1 lemon)
• 2 cloves garlic, finely minced
• 1 tsp lemon zest
• 1 tsp dried Italian seasoning (or fresh dill/parsley)
• ½ tsp smoked paprika

Instructions
Prep & Season: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Trim the woody ends off the asparagus and place them on one side of the pan. Lay the salmon fillets skin-side down on the other side.
Make the Lemon-Garlic Mixture: In a small bowl, whisk together 2 tablespoons of melted butter (or olive oil), 2 minced garlic cloves, 1 tablespoon of fresh lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
Dress the Pan: Drizzle the lemon-garlic mixture evenly over both the salmon fillets and the asparagus. Toss the asparagus lightly to coat, then arrange fresh lemon slices over the salmon fillets.
Bake & Serve: Bake for 12–15 minutes until the salmon flaking easily with a fork and reaches an internal temperature of 145°F (63°C), and the asparagus is tender-crisp. Garnish with fresh chopped parsley before serving.
