Instructions
Prep & Pre-heat: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper. Cut 2 cups of broccoli florets and 1 cup of sliced bell peppers into bite-sized pieces. Toss the vegetables in 1 tablespoon of olive oil, salt, and black pepper, then spread them out on one side of the baking sheet.
Whisk the Glaze: In a small bowl, combine 2 tablespoons of honey, 2 tablespoons of low-sodium soy sauce (or tamari), 2 minced garlic cloves, 1 teaspoon of fresh lemon juice, and 1/2 teaspoon of grated fresh ginger. Whisk until smooth.
Season & Glaze the Salmon: Place 2 salmon fillets skin-side down on the empty side of the baking sheet. Lightly season the salmon with salt and pepper, then spoon the honey-garlic glaze generously over each fillet.
Roast to Perfection: Bake for 12–15 minutes until the salmon is cooked through and flaking easily with a fork (internal temperature reaches 145°F / 63°C) and the vegetables are tender-crisp with roasted edges.
Serve: Garnish the salmon and vegetables with sliced green onions, sesame seeds, and fresh lemon wedges before serving warm.
