Dark Chocolate Avocado Mousse with Flaky Sea Salt
An ultra-creamy, decadent chocolate mousse made from ripe avocados, rich cacao, and pure maple syrup, finished with crunchy sea salt flakes.

What you'll need
Ingredients
2 large ripe avocados, peeled and pitted
1/2 cup raw cacao powder (or unsweetened Dutch-process cocoa)
1/3 cup pure maple syrup (adjust to taste, up to 1/2 cup)
1/4 cup unsweetened almond milk (or coconut milk, for blending)
1 tsp pure vanilla extract
1/2 tsp instant espresso powder (enhances chocolate flavor)
1/4 tsp fine sea salt
Flaky sea salt (such as Maldon), for garnish
Optional toppings: Fresh raspberries, shaved 85% dark chocolate, or coconut whip
Let's make it
Instructions
Prep the base: Scoop the flesh of both ripe avocados directly into a high-speed blender or food processor.
Combine ingredients: Add the raw cacao powder, maple syrup, almond milk, vanilla extract, instant espresso powder, and fine sea salt.
Blend until velvety: Blend on high for 1 to 2 minutes. Stop to scrape down the sides with a rubber spatula, then blend again until completely smooth, silky, and uniform with no green flecks remaining. Add an extra splash of milk if too thick.
Chill: Spoon the mousse into four ramekins or dessert glasses. Chill in the refrigerator for at least 30 to 45 minutes to let the flavors meld and the texture firm up.
Garnish & serve: Right before serving, sprinkle generously with flaky sea salt and top with fresh raspberries or dark chocolate shavings.
