Creamy Small-Batch Homemade Whole Milk Ricotta
A rich, velvety fresh ricotta made with whole cow's milk, cream, and fresh lemon juice in under 30 minutes.

What you'll need
Ingredients
1/2 gallon (8 cups) pasteurized whole milk (avoid ultra-pasteurized / UHT)
1 cup heavy whipping cream
1/3 cup freshly squeezed lemon juice (strained; roughly 2 medium lemons) or 3 tbsp distilled white vinegar
1 tsp fine sea salt or kosher salt
Let's make it
Instructions
Set up the draining station: Place a large fine-mesh sieve or colander over a deep glass or stainless steel bowl. Line the sieve with 3 to 4 layers of clean, damp cheesecloth (or a clean, lint-free flour sack towel).
Heat the milk and cream: Pour the whole milk, heavy cream, and salt into a heavy-bottomed non-reactive pot (stainless steel or enameled Dutch oven). Attach an instant-read or candy thermometer to the rim. Heat over medium-low heat, stirring frequently across the bottom to prevent scorching, until the mixture registers 200°F (93°C)—just below a rolling boil with gentle steam and small bubbles around the perimeter.
Curdle the milk: Remove the pot immediately from the heat. Pour in the lemon juice and stir slowly once or twice with a wooden spoon for 5 seconds to evenly distribute the acid. Stop stirring immediately.
Rest and separate: Let the pot sit completely undisturbed at room temperature for 15 to 20 minutes. You will see thick, white curds separate from the translucent, pale yellow-green liquid whey.
Ladle and drain: Using a slotted spoon or spider skimmer, gently ladle the large curds into the cheesecloth-lined sieve. Pour any remaining contents of the pot through the strainer.
Time the texture: Allow the curds to drain based on your target consistency:
15 minutes: Soft, spreadable, moist ricotta (ideal for dips, toast, or pasta dollops).
30 to 45 minutes: Denser, drier ricotta (ideal for cannoli, cheesecake, or stuffed pasta fillings).
Store and preserve: Discard or reserve the whey for baking bread, smoothies, or marinades. Transfer the warm ricotta to an airtight glass container. Use warm right away, or refrigerate for up to 5 days.
